Another special coffee from co-op leader and farmer Aulia Kahfi in Indonesia, this is a super fruity, funky natural created with a newer fermentation method known as 'winey process'. We're loving the unique taste of this coffee... bold notes of natural wine along with sweet raspberry and sugar.
Similar to natural processing, during winey process the coffee cherries are left to ferment under the sun after washing – but instead of the usual 2 weeks, they are left for up to 60 days with frequent raking (and one more washing session in the middle) to mimic the strong, fermented flavour profile of wine. Always ready to grow his library of coffee techniques, Aulia learned about winey process while attending a Lucia Solis fermentation course.
This coffee comes from Rakyat Farm owned by Aulia Kahpi in Bebesen, Sumatra. Kahpi has a great reputation for quality and now works with 15 neighbouring smallholder farmers (each with an average of 0.5-2.5 hectares) to process larger volume lots and secure better prices for their premium coffee. Kahpi inherited his coffee farm from his parents, but his journey hasn't been an easy one. His success and growing network of farmers are all the result of his entrepreneurial spirit, hard work, and collaborative openness. Already an experienced processor, he attended Lucia Solis' first Indonesian fermentation camps in June '23 and has been experimenting ever since.
Kahpi names his special lots 'Sesongot' after the distinctive caterpillars that hang from the coffee trees on his farm. The sting of a sesongot is extremely painful and can even be fatal, so it's infamous among regional coffee farmers as something to look out for when picking. Harvesting this coffee is no walk in the park, and we're really grateful to Kahpi's team for having the skills and courage to do it.
This coffee is a blend of varietals: Abyssinia, Ateng, Caturra, Gayo, Timtim, and Typica, all grown on Rakyat Farm and surrounding farms at altitudes between 1,300 and 1,600 meters above sea level. We are excited about this coffee and our other Sumatran releases. It's a region we've somewhat overlooked in the past and one we're eager to learn more about!
